The Lobby Lounge Showcases an Afternoon Tea Set with pastries inspired by Alain Ducasse’s Paris restaurants,
all made with Le Chocolat Alain Ducasse

From April 3 – May 31, InterContinental Hong Kong’s famed Lobby Lounge is showcasing a decadent Afternoon Tea Set featuring desserts using recipes from Alain Ducasse’s Paris restaurants, all made with exclusive Le Chocolat Alain Ducasse from Mr. Ducasse’s Manufacture in Paris. Le Chocolat Alain Ducasse is available exclusively in Hong Kong as part of InterContinental Hong Kong’s Lobby Lounge Afternoon Tea Set and the dessert menu at the hotel’s newest restaurant, Rech by Alain Ducasse.

The world famous chef’s culinary philosophy is based on a rigorous selection of quality products, fully exposing their original flavors and fragrances, a practice that comes through in chocolate making.  Alain Ducasse wanted to make his own chocolate to serve in his restaurants. To achieve this, the chocolate had to be made from start to finish, beginning with selecting beans from around the world.

Le Chocolat Alain Ducasse is unique in its craftsmanship – featuring artisan chocolates made from the best cocoa beans sourced from around the world. These are then roasted in Ducasse’s own factory to create his exclusive homemade chocolates. By going back to the roots of the art of chocolate, selecting the best cocoa bean varieties, carefully roasting them, Alain Ducasse and his Artisan Chocolate Maker Nicolas Berger create products with unique and original flavours. The cocoa beans they select come from a variety of terroirs, all situated around the equatorial belt, with each variety selected for its gustatory identity.

The origins of the cocoa are key to discovering the Single-Origin dark chocolate Ganaches. It is the terroir of each country or, more precisely, of each region that gives the beans their individual taste.

Our InterContinental Afternoon Tea Set features an array of savoury items and exclusive Parisian desserts using original recipes created by Alain Ducasse and his team of pastry chefs for his Parisian restaurants including Benoit, Alain Ducasse au Plaza Athénée and Le Jules Verne at the Eiffel Tower as well his Artisan Chocolate Maker Nicolas Berger for Le Chocolat Alain Ducasse.

InterContinental Hong Kong Executive Pastry Chef Cyril Dupuis, who formerly headed the pastry kitchen for all of Alain Ducasse’s Paris Restaurants for 14 years, has prepared the Parisian pastries using exclusive Single-Origin dark chocolate ganache from Peru and Java with 75% chocolate, a Madagascar 45% Milk-Chocolate, a unique blend of chocolate from Peru, Ecuador, Madagascar and Sao Tome 75% and a Madagascar Chocolate 75% with Hazelnut Praline.

The cocoa beans from these countries have been selected for their specific notes: floral (Ecuador & Peru), red fruits (Madagascar) and spices (Sao Tome).  The dark chocolate 75% cocoa reflects the purity and the personality of the artisan manufacturing of Le Chocolat Alain Ducasse, as does the Milk Chocolate 45%.
