2,000 Chefs Globally – Each Preparing a Unique French Dinner

For the third consecutive year, Goût de France / Good France will celebrate French gastronomy in various locations worldwide on March 21, 2017. 2,000 chefs on all five continents are expected to join the event on the eve of spring. Dinners served simultaneously in participating restaurants will honour the merits of French cuisine, its capacity for innovation, and its values: sharing, enjoying, and respecting the principles of high-quality, environmentally responsible cuisine.
Organised by Alain Ducasse, Atout France, which is responsible for promoting the development of the tourism industry (the country’s largest economic sector) and France’s Ministry of Foreign Affairs and International Development, Goût de France / Good France will be celebrated on Tuesday, March 21.
Rech by Alain Ducasse will be one of 2,000 restaurants (and Rech Executive Chef Stéphane Gortina, one of over 2,000 chefs) around the world taking part in this global culinary initiative.
As per Alain Ducasse, “On the same day, 2,000 chefs around the globe will create a unique French dinner. Beyond a celebration of French cuisine, Goût de France / Good France pays respect to today’s cuisine: humanist, energetic, diverse, and relevant. Contributing Goût de France / Good France chefs all share the same values: sharing, enjoying, and respecting the principles of high quality, environmentally responsible cuisine.”
Inspired by Auguste Escoffier, who started The Epicurean Dinners in 1912 – showcasing the same menu, the same day, in several world cities, and aimed at as many diners as possible, Goût de France / Good France reproduces this concept with a desire to involve chefs from around the world, in this special one-day event.
Each chef, including Rech by Alain Ducasse Chef Stéphane Gortina, is creating a French-themed menu, which includes a French apéritif, a cold starter, a hot starter, a fish or shellfish, meat or poultry, a French cheese, a chocolate dessert, French wine and digestif. While the menus are reflective of French gastronomy, the dishes will not be strictly traditional: participating chefs are integrating their own culinary culture and style from haute cuisine to bistro fare.
The Rech “Gout de France” Menu on Monday, March 21 is a 5-course menu at HK$888 per person. Executive Chef Stéphane Gortina and his team will showcase: Marinated Sardines, carrot-corriander; Soft and crunchy quinoa, seasonal vegetables, herb pesto; Cod fillet, courgette-olive-basil; Roasted ‘Jaune des Landes’ chicken, green asparagus from Provence and morels; Selection of matured cheese, crushed condiment and for dessert, Crunchy chocolate from Alain Ducasse’s Manufacture in Paris, crunchy praline by Rech Pastry Chef Francois Delaire.
The wine pairing option is an additional HK$588 per person and includes:

Goût de France / Good France’s objectives are to promote French tourism – highlighting to the world its dynamic and creative chefs and showcasing that French cuisine is contemporary, with participating chefs blending their own culinary culture to that of France. The message is also that French cuisine is healthy, innovative, and responsible. Participating restaurants are encouraged to donate 5% of Goût de France / Good France menu proceeds to a local NGO promoting health and the environment. Rech by Alain Ducasse will be donating 5% to the New Life Psychiatric Rehabilitation Association, which provides a comprehensive range of quality community-based rehabilitation services for people in recovery from mental illness. New Life has over 30 service units across Hong Kong, including halfway houses, sheltered workshops and social enterprises providing work & training opportunities. New Life also has Healthy Living Specialty Shops, New Life Restaurants and an organic farm in Hong Kong's New Territories which offers eco-tours and educational programmes on healthy living.
